Helen's Corner

Cooking for my family is one of my greatest delights. I remember it was some of the best times with my daughter, as she too loves to cook.

My daughter Gracie loves to swim, and I used to surprise her with a delicious treat afterwards. Here’s the recipe.

Helen's After Swimming Snacks

"Peanut Butter Bowl"

Peanut Butter (Kirkland)         1 tablespoon

Pretzels                                            1 cup

Sesame seeds                                2 Tablespoons

Nabisco Wheat Thins                 1 cup

Raisins (Sunmaid)                      2 Tablespoons

Mix the ingredients evenly, making certain to get an even coating on each pretzel. Then place the pretzels on a serving tray served with freshly squeezed lemonade.

This recipe will help replace depleted protein after exercise, restoring much needed energy. I recommend low sugar peanut butter to reduce its intake. I like using Kirklands (click here) brand since it has a pleasant taste and isn’t as high in sugar.

This reminds me when Gracie and I used to have contests to come up with the craziest concoctions, modifying them and serving them for dinner. We made it a rule to not tell her father about what was in the dish, but we knew that if he found out, he would serve more of it to the dog than he would eat it.

Those were great times. I do miss him, but I am glad I can still share my food which has all kinds of memories of great times. I do hope you will share glorious memories serving this recipe. Enjoy! Also don't forget to read my story.
